You will love this recipe delicious and easy homemade potato soup with yummy veggies like carrot, celery, onion, minced garlic, rosemary, and a creamy broth. This recipe is full of flavor and a bowl of this soup is full of vitamins, minerals, and nutrients. So let’s start the recipe. It is ready within 40 minutes only.
Ingredients:
- 3 tablespoons of Butter or Olive Oil
- 2 cups of Chopped Onion (1 medium-size)
- one cup of Chopped Carrot (2 medium-sizes)
- 1 cup of Chopped Celery (2 to 3 stalks)
- 1 tablespoon of Minced Garlic (3 cloves)
- one teaspoon of Chopped Fresh Rosemary or 1/4 teaspoon of Dried Rosemary
- 1/4 Crushed Red Peppers Flakes
- 3 to 4 tablespoons of All-Purpose Flour (Maida)
- 4 cups of Chicken stock or Vegetable stock
- four cups of Potatoes in cubes ( 3 to 4 medium-sizes)
- 1 Bay Leave
- Salt and Ground Black Pepper ( as required)
- 1/4 cups of sour cream, or Plain Yogurt
- A cup of Shredded Cheese (like sharp cheddar or gruyere) is optional

- Chopped parsley

Procedure Of Cooking:
- Take a large pot, add in butter or olive oil, and heat on the medium flame
- When the butter is melted then stir in the onions, carrots, and celery stalks
- Cook, stirring until then the veggies to soften (means cook for 5 to 6 minutes)
- Stir in the minced garlic, rosemary, red pepper flakes, half teaspoon of salt, and 1/4 teaspoon of black pepper
- Cook, stirring everything around the pot, for 30 seconds only
- Add the flour over the vegetables and cook, stirring, until it looks medium blonde in color (about 1 minute )
- Slowly whisk in 2 cups of the stock, making sure there are not any lumps of flour
- It will be thick.
- Pout in the remaining stock and whisk until blended
- Increase the heat and bring to a boiling soup and then reduce to a simmer
- Add the potatoes and bay leaf, and then cook, and partially covered, until the potatoes are tender (about 20 minutes approx)
- Turn the heat to low
- Remove bay leaves from the pot of soup
- Then stir in the cream and cheese
- Add seasoning salt and black pepper as needed
- Serve with fresh herbs on top or for a thick and blended soup
