  • Ground Beef (2 pounds)
  • Breadcrumbs (1/2 cup)
  • Onion (2 medium-sizes), finely chopped or purred
  • Garlic (4 cloves), mashed
  • Salt (1/2 tsp)
  • Black Pepper (1 tsp)
  • Red Pepper Flakes (1 tsp)
  • Cumin (1 tsp)
  • Dried Thyme (1 tsp)
  • Chili Powder (1 tsp)
  • Water (1/4 cup)
  • Baking Soda (1 tsp)
  • Lemon Juice (1 tsp)

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, finely diced onion, and mashed garlic.
  2. Add in the spices.
  3. In a small bowl, mix baking soda, water, and lemon juice.
  4. Pour this into the ground beef mixture.
  5. Mix well with your hand.
  6. Knead it for about a minute so that everything is combined well.
  7. Cover and let it sit in the refrigerator overnight or at least 2-3 hours.
  8. Roll them into meatballs.
  9. Heat olive oil in a cast-iron pan or any non-stick pan.
  10. Cook the meatballs over high heat, flipping them over or shaking the pan occasionally so that all sides are cooked for about 3 minutes.
  11. Don’t overcrowd the pan, cook the meatballs in batches until they finish, or save some to freeze
