Ingredients Of Sweet & Tamarind Chutney
- Tamarind ( 1/2 cup )
- Seedless Dates ( 250 gms )
- Jaggery ( 750 gms )
- Salt ( To Taste )
- Black Salt ( 1 tsp )
- Ginger Powder ( 1/2 tsp )
- Red Chilli Powder ( 1 tsp )
- Jeera (cumin seeds) Powder ( 1 tsp )
- Black Pepper ( 1 small pinch )
- Water ( 1 litre)
Instructions
- Soak seedless dates and tamarind in hot water for 20 minutes.
- Remove the pulp from the tamarind and squeeze. after that transfer the mixture into a grinder jar and grind. Make a smooth paste. Take a small wok, add the smooth paste and add jaggery.
- Turn on the flame and cook jaggery till it’s melted. Add all spices and mix well. Now cook till a layer of scum will form and also remove the scum.
- Cook the tamarind chutney for 30 minutes on medium flame till it’s stirring occasionally. Cook till the tamarind chutney has reached a thin syrup-like consistency.
- Turn off the flame. let it cool down. Now the sweet tamarind chutney is ready.
Ingredients Of Green Chutney
- Coriander Leaves ( 1 cup )
- Mint Leaves ( 1/2 cup )
- Ginger ( 1 inch )
- Green Chillies ( 2-3 )
- Roasted Split Chickpea Lentils ( 1 tsp )
- Black Salt ( 1/2 tsp )
- Cumin Powder ( 1 tsp )
- Dry Mango Powder ( 1 tsp )
- Salt ( to taste )
- Water ( as needed )
Instructions
- Add all of these ingredients to a jar and grind into a nice chutney.
- The green chutney is ready.
Ingredients Of Radga
- Dry White Peas ( 250 gms )
- Water ( as needed )
- Turmeric Powder ( 1/2 tsp )
- Salt to taste
Instructions
- Soak the white peas for 8 hours in normal water.
- In a pan add water and boiled white peas ( with turmeric powder & salt) and bring it to a boil (don’t add too much water it should be not too thick nor too thin).
- Now Ragda is ready.
Ingredients Of Potato Patties
- Oil ( for frying )
- Green Chillies ( 1-2 )
- Potatoes ( 5-6, boiled & grated )
- Salt ( to taste )
- Ginger ( 1/2 inch )
- Oil ( cooking the Tikki )
- 3 White sliced bread, without edges
Instructions
- In a bowl add grated potatoes, salt, garlic-green chilli paste, white sliced bread and mix everything properly and keep aside for 5-10 minutes.
- After resting, make some round Tikki from the mixture and fry on both sides until golden brown.
- Remove and keep aside for further use.
For Assembling Ragda Patties
- On a serving plate add warm Ragda then add some green chutney, sweet & sour chutney and then place the patties on it.
- Now sprinkle some Degi red chilli powder, chopped onion, tomatoes, green chilli, and some dry garlic chutney.
- Then garnish it with some coriander leaves, Sev, roasted cumin powder, chaat masala, pomegranate pearls and lemon wedges.
- Serve immediately.
