  • Boneless, Skinless, Chicken Breast (8oo grams ) Cut into 1-inch cubes
  • Shaoxing Wine Or Dry Sherry ( 1 tbsp)
  • Light Soy Sauce ( 1 tbsp)
  • Baking Soda ( 2 tsp)
  • Cornstarch Or Corn Flour ( 1 tsp )

  • Chicken Stock Or Chicken Broth ( 1/2 cup)
  • Light Soy Sauce ( 5 tbsp)
  • Chinese Black Vinegar ( 2 tbsp )
  • Chinese Shaoxing Wine ( 2 tbsp)
  • Dark Soy Sauce ( 2 tsp )
  • Hoisin Sauce ( 2 tsp )
  • Sugar ( 2 tbsp )
  • Cornstarch Or Corn Flour ( 1 tsp )

Ingredients Of Stir Fry

  • Cooking Oil ( 4 tbsp ) Divided
  • Garlic (1 & 1/2 tbsp ) 4 to 6 cloves
  • Ginger ( 1 tbsp )
  • Red Bell Pepper ( 1/2 capsicum)
  • Green Bell Pepper (1/2 capsicum)
  • Dried Chilies ( 8 to 10 chilies ) cut into 1/2-inch pieces
  • Sichuan Peppercorn (1 tbsp) lightly toasted and ground
  • Green Onion Or Scallion Stems  ( 4 ) cut into 1-inch pieces
  • Unsalted and Roasted  Peanut ( 1/2 cup)

  1. Firstly, Take a large bowl and add all the chicken ingredients and also add chicken. Cover and marinate for 10  minutes.
  2. Now, whisk sauce ingredients together until sugar dissolves and then set aside
  3. heat a large pan or wok then add 2 tbsp of cooking oil and then add the marinated chicken. Fry the chicken for 3 to 4 minutes while occasionally stirring, until edges are browned.
  4. Remove the heat and set aside the chicken pieces
  5. Add remaining cooking oil into the same pan or wok and then add garlic,m ginger, dried chilies, bell pepper ( red and green), and also add Sichuan peppercorns, and stir fry for 1 to 2 minutes only.
  6. Also, add prepared sauce and mix, and bring it to a boil while stirring
  7. Once it begins to thicken slightly, add the chicken back into the pan/wok and mix all of the ingredients through the sauce until the chicken is evenly coated and the sauce has thickened, (about 2 minutes).
  8. Stir in green onions, peanuts, and sesame oil. Toss well and continue to cook for a further 2 minutes to infuse all of the flavors together.
  9. Serve immediately with steamed/cooked rice or fried rice!
