1 1/2 cupsUnsweetened Cashew Milk or other Non-Dairy Milk
1 tbsp Maple Syrup
1 1/2 tsp Double-Strength Vanilla or 3 teaspoons Regular of Vanilla
1/4tspPumpkin Pie Spice
2tbsp Puree Pumpkin
1pack Starbucks VIA instant coffee I used Columbian
2tbsp Light Whipped Cream {optional}
Instructions
Place cashew milk, maple syrup, vanilla, pumpkin pie spice, and pumpkin in a small saucepan.
Bring to a simmer; stir in instant coffee; transfer to a mug.
Top with whipped cream, if desired.

Notes
For a vegan version, use cashew cream in place of whipped cream. Use 1 1/2 tablespoons maple syrup if you like it sweeter.
