Ingredients:

For mutton marination:Special Pressure Cooker Mutton Biryani Pakistani Food Recipe

  • Mutton Leg Cut ( 1 kg )
  • Green Chili (  4 to 6)
  • Garlic Ginger paste ( 2 tsp )
  • Red Chili Powder ( 1 tsp )
  • Turmeric Powder ( 1 tsp )
  • Garam Masala Powder ( 1 tsp )
  • Beaten Yogurt ( 1 cup )
  • Hand Crushed and Deep Fry Onion ( 1 cup )
  • Coriander Leaves Chopped  ( 1 cup )
  • Mint Leaves ( 1/4 cup )
  • Tomatoes Chopped ( 1/2 cup )
  • Ghee or Oil whatever you like ( 2 tsp )
  • Small Cinnamon Stick ( 3-4 )
  • Green Cardamoms ( 2 )
  • Cumin Seeds ( 1 tsp )
  • Bay Leaves ( 3 )
  • Cloves ( 4 )
  • Green Chili Slit ( 6-7 )
  • Salt ( To Taste )
  • Strands of Saffron
  • Milk ( 1/2 cup )

For Rice :Special Pressure Cooker Mutton Biryani Pakistani Food Recipe

  • Basmati Rice ( 1/2 Kg )
  • Ghee ( 1 tsp )
  • Small Cinnamon Stick ( 3-4 )
  • Cumin Seeds ( 1tsp )
  • Green Cardamoms ( 2 )
  • Black Cardamoms ( 2 )
  • Bay Leaves ( 3 )
  • Cloves ( 4 )
  • Green Chilli Garlic Ginger Paste ( 5-6 )
  • Salt ( to taste )

For Layering:

  • Coriander Leaves ( 1/2 cup )
  • Deep-fried onion ( 1/2 cup )
  • Ghee ( 2 tsp )

Instructions:

For the Rice:

  1. Take Basmati rice and soak them in lukewarm water for 20 minutes.
  2. Take a pan and add some water to it and when the water is boiling add ghee, salt, cumin seeds, cloves, black cardamom, green cardamom, cinnamon stick, green chili paste, garlic paste, ginger paste, and bay leaves. then cook for 2-3 minutes.
  3. Add basmati soak rice to the boiling water and cook for 12 minutes on a high flame.
  4. Now drain the rice.

For Marination: 

  1. Take a bowl and add mutton pieces, yogurt, mint leaves, fried onion, coriander leaves, ghee, slit green chilies, garlic ginger paste, and green chili paste.
  2. Add bay leaves, red chili powder, cumin seeds, garam masala powder, turmeric powder, cinnamon sticks, saffron, cloves, black cardamom, and green cardamom.
  3. Now marinate mutton for 30-35 minutes.
  4. Turn on the pressure cooker and add marinated mutton to it.
  5. Add tomato and salt to taste.
  6. Now add 1/2 cup of milk.
  7. Add some tsp of oil and mix it well.
  8. Let’s cook the mutton in pressure cook till the 4 whistles and after 4 whistles open the lid of the pressure cooker.
  9. Check the rice and do not break the grains of rice.
  10. But remember do not cook the rice completely.
  11. The rice needs to be 3-4 hooked and strain this off.
  12. After 4 whistles open the lid of the pressure cooker very carefully and turn the flame off.
  13. When the pressure in the cooker subsides completely, open the lid.
  14. Now it’s time to set the Pressure cooker mutton biryani in layers.
  15. Use the same pot and add cooked mutton and rice layer by layer without breaking the basmati rice.
  16. Do not press the gravy and add some ghee, fried onion, and chopped coriander leaves.
  17. Repeat the layers.
  18. Now cover the lid and cook for 7 minutes on the high flame and cook for the next 7 minutes on the low flame.
  19. After 14 minutes, open the lid and turn off the flame.
  20. Garnish with fried onion
