I have you covered all with detailed step-by-step photos in this helpful recipe post sharing 4 variations or ways to make this decadent sweet.
Carrot halwa is a popular sweet made in North India, and it is especially popular during winter. The traditional Gajar ka halwa recipe is made with only carrots, whole (full-fat) milk, ghee, and sugar; there’s no need for khoya (evaporated milk solids) or condensed milk.
If you prefer using either khoya or milkmaid (sweetened condensed milk), skip to the appropriate section below to learn how!
I prefer to use red Delhi carrots to make the halwa, as they are tender and juicy.
That said, you can use any carrots – red, orange, or even black – so long as they are not fibrous, stringy, or hard.
What is Gajar ka Halwa?
Gajar ka Halwa is a Pakistani/Indian dessert made using carrots and milk. It is usually garnished with nuts and raisins.
Let me tell you, this is one of my favorite Pakistani desserts – the sweet flavor and texture of the carrots once it has been cooked down is out of this world!
It becomes almost fudgy, which makes it so so delicious when it is served warm on a cold winter day.
Gajar ka Halwa is a popular dessert to serve at weddings and parties. It is considered a winter dessert due to the abundance of carrots available in the winter season in Pakistan/India and also due to the warming properties of carrots– some households make a point to cook Gajar ka Halwa at least once a year in winter.
